1 (16oz) pkg. angle food mix 2 (8 oz) cans crushed pineapple in pineapple juice 1 (1oz) pkg. instant reduced-calorie white chocolate pudding mix 1 cup skim milk 1 1/3 cups sweetened shredded coconut toasted and divided
1) Heat oven to 350. With mixer on low speed beat the first two ingredients 30 sec. On medium speed: beat 1 min. divide batter between 2 greased 9" pans. 15 mins or until done. Let cool 10 mins. Unmold :cool completely
2) In bowl, Whisk the next 2 ingredients 1 min or until smooth: stir in whipped topping. In bowl, mix 1 cup mixture and 1/3 cup coconut Place first layer on platter; spread with coconut-pudding mixture. Top with remaining pudding mixture. Put remaining coconut onto sides.

It was good but it wasn't like any pina colada I've ever drank... toast I love making them from scratch...

sounds easy and delicious. perhaps needs some booze in it.( a little rum perhaps???) toast
