Made this for my BO for Super Bowl! 2 chicken breasts 2 red bell peppers 2 med sweet onions 2 Tbsp mayo. 2 Tbsp butter 2-4 Tbsp Franks hot sauce Olive oil for roasting About lb. sliced cheese (We used colby jack) Loaf of sliced sourdough bread and softened butter Spread mayo over chicken breasts. in covered dish at 350 for 45min to 1 hr. Melt butter, add hot sauce, stir well. Shred chicken and stir into hot sauce/butter until thoroughly coated. Set aside. ( Adjust amount of hot sauce to your preference) Slice peppers and onions, not too thin. Toss with a little olive oil and roast in baking pan for about 15 minutes at 425 stirring occassionally, until soft but not browned. Remove from oven. Layer cheese, chicken, pepper/onion mix, cheese on buttered bread for grilling. Works best with a sandwich press or with a weight to press down. Serve with bleu cheese or ranch dressing on the side. Makes enough to feed a group. Enjoy!

Ohhhh....this sounds good and would be easy to make "hot" or "FIRE" to the persons liking!!

I love buffalo chicken, and i would suggest the roaster chickens all ready cooked, i bet that way dinner in 20 minutes.
