I had a craving for chicken parmigiana Friday, so I went get the stuff to make it.
I bought a box of garlic parmesean shake and after a coworker suggested I use shake and instead of frying the chicken. Didn't have the energy to fry chicken, and the lack of grease appealed to me. I had some boneless chicken thighs that I coated in an egg wash with various seasonings (whatever you prefer. I put oregano, basil, tony chacherie's, and garlic powder but I wish I had some parsley and lemon pepper) and then coated with the shake and .
I popped that in the oven and wound up having to for 40 min for it to be fully cooked at 400 deg (Fahrenheit) but some of the pieces were still a bit frozen.
I boiled some angel hair pasta and used a prego jar of tomato, basil, and garlic sauce because I didn't feel up to cooking down a sauce from scratch. I just wish I had added some more garlic to the sauce and remembered to put some salt in the pasta while boiling.
While the noodles were boiling, I tossed the sauce in a pan and cooked it down so that it wasn't bright red. Once that was done, I mixed up the pasta and sauce in a baking dish. I had a bag of mixed Italian cheeses that I liberally coated the pasta/sauce mix with.
Sauteed some mushrooms on the side and when it was done, put it all together. It was absolutely delicious.
I also grabbed a kit to make a pumpkin cheesecake. It was more work than I thought it would be but it came out really awesome and satisfied my craving for something with pumpkin.
