My favourite. Little tricky to make if you are not skilled with baking but it is worth to try. I am making one now, so pictures later.
First of all I should explain those greaves, those are pieces of pig fat with very little meat that is fried on fire until they let all the fat and until crispy and delicious. It does not sound pretty put boy they are good. Trust me. I don't know if you have them there, but here are delicacy.
So you will need:
500 g of flour 250 g of ground greaves 3 yolks(one for coating) half cube of yeast 2 dl of milk salt, paper 1,5 white vine 100 g of fat
So put a yeast in warm milk with just a little of sugar to help it work better
Put ground greaves, yolks, seat yeast, salt , paper and vine in one bowl. Mixed it good with flour.
Let it seat for 30 min.
Roll out the dough to a thickness of 1 cm
Smear it with a thin layer of fat
Fold it like a book , and once again in half
Let it rest for 3o minutes and repeat the process .
Cut shapes you want and smear egg yolk all over them
It is important not to over do the rest of the dough, because it lost that puffy effect. In other words don't knead the dough after it is seat.
bake at 200 C , 25 min.

Sounds like our bacon. or crackles as it is called in the south. fried crisp pork fat... and that dough sounds like it will be flaky cause you roll and fold. looking forward to seeing photos. here we can buy the dough already made in containers and fry up the bacon and add it to the dough. easy.. but not as good as home made.

This time we ate it all before I could take a pic. I fortgot. But here is one from internet, it looks the same. It is not like bacon, it is same part of the meat like bacon, but it is cut in cubs and ticker.

It is even better if you fold it more then 2 times, but if you are hungry it is hard to wait every 30 min to fold

Looks great.. we call that pancetta in italy.. cubes of fat and pork meat cut into tiny pieces and fried it just gets crispy. and makes bread and biscuits taste i would just devour those with warm butter or honey. yummo..
