growing up my grandmother always made what we called comfort food. no not macaroni and cheese or meat loaf. those one pot veggie dishes that always seemed to show up at the table with dinner. tonight i had escarole and beans and let me tell you i was in heaven
i used one container of chicken broth 2 heads that are small of escarole chopped onion garlic salt 1 can of cannelini beans and i also used olive oil around the escarole and let it cook until all pieces of veggie were nice and soft. pepper and i cooked it all together. of course parsley and grated cheese when i served it.. oh and i made italian sausage that i fried up and i cut that and served it with my portion.
