Yes I do mean if you really love your spouse you will fix these pancakes for him. At the same time you will be giving the both of you a healthy treat. Dixie uses oat flower and splenda because of ahhh, ahhh lets say the lack of need for sugar. Dixie fixed these for me this morning and I can not for the life of me walk by her without thanking her since. It is past twelve noon and my tummy is still happy. I told her I just had to share it with yall.
Shirley's Oatmeal Pancakes Note: My recipe makes 6 medium pancakes enough for just the two of us. You can increase the recipe by another 1/2 of all ingredients for a normal size recipe 1 cup Buttermilk 1 cup Old-fashioned Oatmeal (Combine and let sit for 15 minutes) 2/3 cup Oat Flour or All-Purpose Flour 1 1/2 Tablespoon Splenda or Sugar 1 1/2 teaspoon Baking powder 1/2 teaspoon Baking soda 1/2 teaspoon Salt 1/2 to 1 teaspoon Cinnamon (My husband loves cinnamon) 1 teaspoon Vanilla extract 2 Eggs, lightly beaten 2 Tablespoons Butter, melted Additional Buttermilk if needed to thin batter Cinnamon chips (optional) Place buttermilk and oatmeal in a medium mixing bowl and let sit 15 minutes to soften oats. Measure the other ingredients as listed and add to bowl. Stir until well mixed. Add Cinnamon chips if you wish. If the batter seems too thick add additional buttermilk until the batter is a better consistency (I would say about 1/4 cup). Cook on griddle sprayed with Pam at medium heat. Oatmeal pancakes are thicker so the tops will not indicate when to flip so when the edges appear cooked, then flip over.

I love pancakes.. so i will make them for me. but hubby loves waffles.. i bet the batter would make a great one and perhaps chipped beef or sausage and gravy. ?
