I just made some this morning so I thought I'd share how we make it. Not diet food at all!
We make Jasmine rice in our rice cooker and make a full batch, however much that is I'm not sure, sorry. We've used Basmatti rice but I don't like how it smells as it cooks. Once it's cooked we lay it out on a cookie sheet to dry a bit. We add: 2 packages of Kikkoman Fried Rice powder Soya sauce to taste Oil that my husband makes by putting oil in a bottle of red chile flakes Chopped onions that have been sauteed in butter One package of bacon cooked and cut into pieces Chopped chicken, we often use leftover chicken or have used beef we've chopped and sautéed with teriyaki sauce but we prefer the chicken Peas 3 or 4 eggs that have been whipped up and have coarse black pepper in them, basically they're scrambled eggs but we cook them in the microwave
Corn sometimes but I'm not big on it for fried rice We have put in grated carrots but I find they go a bit tough and stringy, nice for colour Other things that we have around like cooked celery
Once everything is mixed up we put it in our electric frying pan and heat it for a bit and it's done. I like mixing the fried rice powder, the soya sauce (which I use quite a bit of) and the oil and a bit of water together and putting it on last. We've also used the bacon grease as the oil in the frying pan but that seems excessively fattening and I'm not sure it made a difference in flavour. When I make it I don't use oil in the frying pan at allbut my husband does, just a bit.

Oh, that sounds good - will have to try this soon. I never even thought about adding something like the Kikkoman powder!
For the rice, would you guess maybe 4 cups? or more? Just so I can try to scale a bit.

I'm sorry MM, I don't know how much rice, I just know it's the most we can make in our rice cooker. That's my husband's department. Maybe four cups, yes. It's quite a bit of rice because we love this stuff and make big batches and it freezes well for lunches later. You could try just making a smaller batch and one package of the fried rice seasoning. It's really something that you just make to taste. My husband makes it a bit differently and it's still good. I kind of add spices as I go. I use a lot more soya than he does and he likes to add the fried rice seasoning to it dry but I find his rice comes out a bit dryer than mine.

I was thinking of fried rice just the other day. i have made it before and if you use about 1 1/2 cups of uncooked rice you will be ok with the amount. what i found recently is the uncle bens microwave 90 second rice. it is great and easy to whip up fried rice in minutes . thanks .. good dinner idea

I like to add bean sprouts and sugar snap peas to my fried rice.

Small shrimps would probably be good, too. I'm not a fish person, though.

I don't really like fish either but I do like shrimp, in fact I think I have some in my freezer - thanks for the reminder!
