Here's what I do with leftover chicken if there's not very much. Chop it up and add whatever is around. I use sour cream and Miracle Whip as sauce mix and then add the chicken and whatever we have hanging around for leftovers like chopped up veggies or don't add anything else at all. I also always add grated cheese. Then I take Pilsbury crescent rolls and roll them out as triangles and plop blobs of the chicken mixture on the center and pull the sides of the crescent rolls up and squish the seams so they're like a little package. I them for maybe fifteen minutes at about 325 if I remember right, just until the outsides are golden.

That sounds yummy too! I always have left overs (of course it is only me eating what I cook and I have a hard time scaling down a recipe - oh I can do it, I just seem to forget!).
I got a new recipe for chicken fried rice today, basically like the rest of them though.
