I want to share what i do with my thanksgiving turkey, i stuff with oyster stuffing and than i tie the legs. after that i drape with slices of bacon. that bacon adds fat drippings to the pan so when i make my gravy it has enough fat and smoky flavor and makes the turkey nice and juicy. I also wrap with aluminum and bake at 325 degree oven than take the aluminum off one hour before it is done to crisp the skin. Oh and do not forget to dust with salt and pepper inside and out.

Yummy One thing I will miss about Maryland. Is the seafood...It's oyster season too!!

I usually get the ones already shucked. and if i can not get those than i get smoked oysters.

We've already had Thanksgiving here in Canada but that sounds good for Christmas! I usually rub butter in to the skin but bacon sounds much yummier! I hate to say it but I now use Stovetop Stuffing for the dressing. I used to cut the bread all up and make it myself but the stovetop stuff is pretty much the same or at least close enough to not bother. If I liked seafood the oyster stuffing sounds interesting!

I use the cornbread stuffing that comes in a bag. and i saute onions, celery, garlic. parsley lots of pepper in butter, than add to dry bread cubes with more butter if needed and some water or turkey broth of when doing my oyster stuffing some juice from them
