Can you use food mixers to make pastry, like shortcrust pastry, crumbles and dough?

I use my quisanart food processor for dough all the time. i use the plastic blade and just mix until it just forms. than roll out on floured board. i also have a kitchenaide with a dough attachment. again mix until it just forms and than flour and roll out on board.
if you use a regular hand mixer do not over mix. or the dough will be hard and not elastic.

You can just beat slow and low for a few turns and make sure your butter is soft.

The whole thing with a pastry crust is to mix only enough, don't stretch the dough, use low gluten flour (the protein part of the seed) and have all ingredients as cold as can be and still manipulate them. That is how a crust is tender and flaky. Like me!
